Ingredients

  • 4-1/2 cups cabbage, shredded

  • 6 large carrots, shredded

  • 8 green onions, chopped

  • 1/3 cup sunflower kernels or sliced almonds

  • 1/2 cup fresh blueberries or sliced fresh strawberries

  • 1 cup fat-free poppy seed salad dressing

  • 1.5 cup shredded chicken, cooked

Directions

  • In a large bowl, combine cabbage, carrots, green onions, and optional fruit and chicken.
  • Drizzle with dressing; toss to coat.
  • Refrigerate, covered, at least 1 hour
  • Just before serving, top with sunflower kernels, almonds or both.
