Poppyseed Coleslaw Chicken Salad is a great salad or side anytime but really refreshes during Summer. Add strawberries and shredded chicken for a quick lunch.
Poppyseed Coleslaw Chicken Salad
4-1/2 cups cabbage, shredded
6 large carrots, shredded
8 green onions, chopped
1/3 cup sunflower kernels or sliced almonds
1/2 cup fresh blueberries or sliced fresh strawberries
1 cup fat-free poppy seed salad dressing
1.5 cup shredded chicken, cooked
- In a large bowl, combine cabbage, carrots, green onions, and optional fruit and chicken.
- Drizzle with dressing; toss to coat.
- Refrigerate, covered, at least 1 hour
- Just before serving, top with sunflower kernels, almonds or both.
